Terroir
Ribera de Duero vineyards located in Roa, with a sandy soil composition on the surface and poor limestone clays at depth. The continental climate typical of Ribera del Duero, characterized by cold winters and very hot and dry summers, with very cold nights during the ripening season, gives a unique character and personality to our vineyards.
Winemaking process
Individualized monitoring of each plot to determine the optimal harvest date. Fermentation in stainless steel tanks, with temperature control up to a maximum of 28ºC, and with daily pumping over. The de-stemming is carried out halfway through fermentation to accelerate the extraction of coloring matter from the skins. Devatting is carried out when the color parameters have reached the optimum value. Malolactic fermentation is carried out in tank at the end of alcoholic fermentation.
